Made with rice flour, roasted urad dal flour, sesame, cumin, and butter,
every crisp spiral celebrates the simple joy

Some recipes begin in a cookbook.

Mine began every Deepavali, with two siblings who knew exactly what would make the other smile.
A crispy Murukku for my younger brother.

For the Dough
2 cups rice flour
ยฝ cup roasted urad dal flour
2 tablespoons softened butter
1 teaspoon white sesame seeds
1 teaspoon cumin seeds
ยผ teaspoon asafoetida
1 teaspoon salt (or to taste)
1ยผโ1ยฝ cups water (approximately)
For Frying
Vegetable oil for deep frying
Step 1 โPrepare the Flour Mixture
In a large bowl, combine the rice flour, roasted urad dal flour, sesame seeds,
cumin seeds, asafoetida, and salt.
Mix thoroughly.
Step 2 โAdd the Butter
Rub the softened butter evenly into the flour mixture until it resembles coarse crumbs.
This creates Murukku that is crisp yet light.
Step 3 โ Prepare the Dough
Gradually add warm water while mixing.
Knead until you have a smooth, soft dough.
It should feel pliable without sticking to your hands.
Cover with a damp cloth while working.
Step 4 โShape the Murukku
Fill a Murukku press fitted with the traditional star-shaped disc.
Press spirals directly onto small squares of parchment paper or lightly greased banana leaf pieces.
Shape each Murukku gently without making the spirals too tight.
Step 5 โFry Until Golden
Heat oil over medium heat.
Carefully lower each Murukku into the oil.
Fry in batches until golden and crisp, turning once for even cooking.
Remove using a slotted spoon.
Step 6 โ Cool Completely
Drain on paper towels.
Allow the Murukku to cool completely before storing.
The crunch develops even further as it cools.
