They became the sweetest punctuation mark to a day filled with laughter, encouragement, and the kind of love

Today, every soft Gulab Jamun carries me back to those beautiful afternoons.

For the Gulab Jamuns
2 cups milk powder
ยฝ cup all-purpose flour
1 tsp baking powder
2 tbsp ghee
ยฝ cup whole milk (approximately)
2 tbsp plain yogurt
Oil or ghee for frying
For the Sugar Syrup
2 cups sugar
2 cups water
4โ5 green cardamom pods, lightly crushed
Few strands saffron (optional)
1 tsp rose water
1 tsp lemon juice
Step 1 โ Prepare the Sugar Syrup
Combine sugar, water and cardamom in a saucepan.
Bring to a gentle boil until the sugar dissolves completely.
Add saffron if using.
Stir in lemon juice.
Simmer for 5โ7 minutes.
Turn off the heat and stir in rose water.
Keep warmโnot boiling.
Step 2 โPrepare the Dough
In a bowl combine:
Milk powder
Flour
Baking powder
Rub in the ghee until the mixture resembles breadcrumbs.
Add yogurt.
Gradually pour in milk until a very soft dough forms.
Do not knead heavily.
Cover and rest for 10 minutes.
Step 3 โ Shape the Jamuns
Grease your palms lightly.
Roll into smooth balls about the size of large grapes.
Ensure there are no cracks.
Step 4 โFry Slowly
Heat oil or ghee over medium-low heat.
The temperature should be around 285โ300ยฐF (140โ150ยฐC).
Add only a few balls at a time.
Stir gently so they brown evenly.
Fry patiently until deep golden brown.
Remove onto paper towels.
Step 5 โ Soak
Place the warm jamuns directly into the warm syrup.
Allow them to soak for at least 2 hours.
The longer they rest, the softer and more flavorful they become.
Serve warm or at room temperature.
