For our family, Kodubale was always both.

Before every train left Mangalore, paper packets filled with crisp,

golden rings from Taj Mahal Sweet Store found their way into our luggage.

They survived long train rides, disappeared during tea breaks, and somehow always tasted of home

long after the journey had ended.

Today, I make them in my own kitchen, but every batch still reminds me that

some recipes are more than snacks—they're little pieces of belonging

we carry with us wherever life takes us.

📝 Ingredients

For the Dough

  • 2 cups rice flour

  • ½ cup roasted gram flour (pottukadalai / roasted chana dal powder)

  • ¼ cup all-purpose flour (optional, for a lighter texture)

  • 2 tbsp unsalted butter or hot oil

  • 2 tbsp grated fresh coconut

  • 1½ tsp cumin seeds

  • 1 tsp sesame seeds

  • 10–12 curry leaves, finely chopped

  • 2–3 dried red chilies

  • ½ tsp Kashmiri chili powder

  • ¼ tsp asafoetida (hing)

  • 1 tsp salt

  • 1¼–1½ cups water

For Frying

  • Vegetable oil or Peanut Oil for deep frying


🍽️ Instructions

  • Step 1 —Prepare the Spice Paste

    Blend together:

    • dried red chilies

    • grated coconut

    using just enough water to make a thick paste.

  • Step 2 —Make the Dough

    Bring the water to a gentle boil.

    Add:

    • salt

    • butter

    • spice paste

    • cumin

    • sesame

    • curry leaves

    • hing

    Reduce heat.

    Stir in the roasted gram flour.

    Add rice flour gradually while stirring continuously until the mixture comes together.

    Remove from heat.

    Cool until warm enough to handle.

    Knead into a soft, smooth dough.

    If dry, sprinkle warm water.

    If sticky, dust lightly with rice flour.

  • Step 3 —Shape

    Pinch off lemon-sized portions.

    Roll each into a rope about 5–6 inches long.

    Join the ends gently to form rings.

    Do not make them too thick, or the centers won't cook evenly.

  • Step 4 —Fry

    Heat oil over medium heat.

    The oil should be around 325–340°F (160–170°C).

    Slide in a few Kodubales at a time.

    Do not overcrowd.

    Fry slowly, turning occasionally, until evenly golden brown and crisp.

    Remove to a paper towel-lined plate.

    Allow them to cool completely before storing.

    Yes. Omit the all-purpose flour. The texture will be slightly more rustic but equally delicious.

  • Can I bake them?

    Traditional Kodubale is deep-fried. Baking produces a different texture and won't achieve the same crispness.

    The dough may have been too dry, or the oil too hot. A soft dough and moderate frying temperature produce the best texture.

  • Can I freeze the dough?

    Fresh dough is recommended, though shaped rings can be frozen briefly before frying.
