๐ฅ Crunch, Spice & Condiments on the Side
Some festival recipes announce themselves with rich aromas and bubbling pots.
Others arrive quietly in handfuls.
Seedai is one of those humble treasures.
Made with rice flour, butter, sesame, and gentle spices, these tiny crispy balls
have been lovingly prepared in South Indian homes for generations,
especially during Krishna Janmashtami.
Golden, crisp, and delightfully crunchy,
Seedai reminds us that
some of the happiest festival memories
are shared one handful at a time.
Simple in appearance yet deeply rooted in tradition, every batch reminds us that celebration
often lives in the smallest details shared with family and friends.
โThe smallest offerings often carry the deepest traditions.โ

For the Dough
2 cups roasted rice flour
2 tablespoons roasted urad dal flour
1 tablespoon butter, softened
1 teaspoon white sesame seeds
1 teaspoon cumin seeds
ยผ teaspoon asafoetida
8โ10 curry leaves, finely chopped
Salt, to taste
Water, as needed
For Frying
Vegetable oil for deep frying
Step 1 โ Prepare the Dry Ingredients
Combine the rice flour, roasted urad dal flour, salt, sesame seeds, cumin seeds,
asafoetida, and finely chopped curry leaves in a large mixing bowl.
Mix thoroughly.
Step 2 โAdd the Butter
Rub the softened butter into the flour mixture until it resembles coarse crumbs.
This helps create a light, crisp texture.
Step 3 โ Prepare the Dough
Gradually add water a little at a time.
Knead into a smooth, soft dough.
It should be pliable without becoming sticky.
Step 4 โShape the Seedai
Pinch off tiny portions of dough.
Roll gently into small marble-sized balls.
Avoid pressing too firmly.
Arrange on a plate while shaping the remaining dough.
Step 5 โFry Gently
Heat oil over medium heat.
To test, drop one Seedai into the oil. It should rise gradually with gentle bubbles.
Carefully add the Seedai in small batches.
Fry until golden and crisp, stirring occasionally for even cooking.
Step 6 โ Cool Completely
Remove with a slotted spoon.
Drain on paper towels.
Allow to cool completely before storing.
They become even crispier as they cool.

Spices are more than heat or color โ theyโre the quiet backbone of everyday Indian cooking.
Used with care, they bring warmth, balance, and depth to even the simplest meals.
If youโve ever wondered why certain spices are paired together, or how masalas shape flavor without overwhelming it,
Iโve gathered those foundations into a gentle, practical guide.
There is something wonderfully joyful about Seedai.
Tiny enough to fit into the palm of your hand, yet carrying generations of festival traditions,
these little crispy bites remind us that celebrations are often built
from the simplest recipes shared with the people we love.
The secret to perfect Seedai lies in the dough.
A soft, well-balanced dough creates beautifully crisp Seedai without becoming dense.
Roll each ball gently rather than compressing it tightly, allowing the dough to fry evenly
and develop its signature light crunch.
Sift both flours for an even texture.
Chop curry leaves very finely.
Roll the Seedai gentlyโavoid compacting the dough.
Fry over medium heat for even cooking.
Cool completely before storing.
Store in an airtight container for up to two weeks.
Why did my Seedai crack while frying?
Tiny air pockets or excess moisture can cause cracking. Roll the dough gently
without trapping air, and make sure the flour is evenly mixed.
Can I prepare the dough ahead of time?
Yes. Cover and refrigerate for several hours. Bring it back to room temperature
before shaping.
Can I bake Seedai instead of frying?
Traditional Seedai is deep fried for its characteristic texture. Baking produces a
different result but can be done if preferred.
How long does Seedai stay fresh?
Stored in an airtight container, it stays crisp for up to two weeks.
