๐Ÿฅฅ From the Coconut Coast

Coastal recipes shaped by coconut, spice, and the flavors of Mangalorean kitchens.

โค๏ธ Introduction

Some kitchens carry the landscape within them.

Along Indiaโ€™s southwestern coast, coconut palms, the Arabian Sea, monsoon rains,

and an abundance of spices have shaped generations of cooking.

In Mangalorean kitchens, coconut appears in countless forms โ€”

freshly grated into chutneys, ground into masalas, simmered into curries,

toasted until fragrant, or pressed into coconut milk.

Curry leaves crackle in hot oil.

Tamarind lends its unmistakable tang.

Chillies bring both color and heat.

From the Coconut Coast gathers recipes inspired by that culinary landscape

and by the food traditions I inherited through my Mangalorean roots.

Here youโ€™ll find coconut-rich curries, vegetable dishes, rice preparations,

chutneys, seafood, and other recipes

where the flavors of the coast find their way to the table.

Some are everyday dishes.

Some belong to celebrations.

Some have travelled far from the kitchens where they began.

But each carries a little of the coast with it โ€”

coconut, spice, memory, and the taste of home. ๐Ÿฅฅ๐ŸŒฟ

โ€œSome recipes carry more than flavor. They carry the landscape that first taught them how to taste.โ€
