Neer Dosa is one of the simplest and most beloved dishes from the kitchens of Mangalore.
Soft, lace-like, and wonderfully light, it pairs beautifully with seafood curries,
chicken dishes, and coconut-based gravies.

🍤 For the Batter
2 cups raw rice
¼ cup fresh grated coconut (optional)
Water, as needed
Salt, to taste
Step 1 — Soak the Rice
Wash the rice thoroughly and soak for 2–3 hours.
Step 2 — Blend the Batter
Drain the rice and blend with coconut (if using), salt, and enough water to create a very smooth batter.
The consistency should be much thinner than regular dosa batter—almost like milk.
Step 3 —Heat the Pan
Heat a non-stick pan over medium heat.
If using a traditional cast-iron tawa, lightly grease with ghee before each dosa.
Step 4 — Pour & Swirl
Stir the batter well before each dosa.
Pour a ladleful onto the hot pan and immediately lift and rotate the pan so the batter spreads into a thin, lace-like layer.
Step 5 — Cover & Cook
Cover with a lid and cook for about a minute until the surface is set.
Do not flip.
Step 6 — Fold & Serve
Gently lift the edges.
Fold in half, then into a triangle.
Serve warm.
