๐Ÿ“ Ingredients

For the Mussels

  • 20โ€“25 fresh mussels (in shell)

  • Salt, to taste (use sparingly for seafood)

For the Stuffing

  • 2 cups rice flour (roasted or plain)

  • ยฝ cup fresh grated coconut

  • 5โ€“6 green chilies

  • 1 large onion, sliced

  • ยฝ inch ginger

  • 3 cloves garlic

  • 2 tbsp fennel seeds

For the Batter

  • 2 tbsp chili powder

  • ยฝ tsp turmeric powder

  • Salt to taste

  • 3โ€“4 tbsp water

For Deep Frying

  • ยฝ cup canola oil (or any neutral oil)

For Air Frying (Optional)

  • 1โ€“2 tbsp oil (for brushing) or cooking spray


๐Ÿฝ๏ธ Instructions

  • ๐Ÿงผ 1. Clean & Prep Mussels

    1. Soak mussels in cold water and scrub shells. Remove the โ€œbeard.โ€

    2. Discard any mussels already open.

    3. Boil mussels 5โ€“7 mins until shells open. Discard unopened ones.

    4. Cool and set aside.

  • ๐Ÿฅฃ 2. Prepare Stuffing

    1. In a pot, boil 2 cups water.

    2. Slowly stir in rice flour with a pinch of salt until a thick dough forms. Remove from heat.

    3. Blend coconut, chilies, ginger, garlic, fennel seeds, and onion into a smooth paste.

    4. Mix the paste into the warm rice dough. Let cool slightly.

  • ๐Ÿฆช 3. Stuff & Steam

    1. Gently pry open each mussel.

    2. Fill with the rice-coconut mixture, pressing it between the shells.

    3. Steam 12โ€“15 mins in batches.

    4. Cool, then remove shells, keeping the stuffed filling intact.

  • ๐Ÿ”ฅ 4. To Deep Fry

    1. Whisk chili powder, turmeric, salt, and water into a thick batter.

    2. Dip steamed mussels into batter.

    3. Deep fry until crisp and golden.

  • ๐Ÿ’จ 5. To Air Fry

    1. Preheat air fryer to 375ยฐF (190ยฐC).

    2. Brush mussels lightly with oil.

    3. Air fry 10โ€“12 mins, flipping halfway, until golden.

Serve with lime wedges and a sprinkle of black pepper.

Pair with rice gruel (kanji) for a traditional coastal meal.

A side of coconut chutney adds a cooling contrast.
