🌿 Introduction

Lightly spiced, gently sautéed, and finished with warmth rather than heat, Cabbage Poriyal is the kind of dish that anchors a South Indian meal without demanding attention. Crisp-tender cabbage, tempered with mustard seeds, lentils, curry leaves, and coconut oil, turns a humble vegetable into quiet nourishment.

“Some dishes don’t shout — they stay”

* Choosing, Storing, and Preparing cabbage

For Tempering

  • 1 tbsp coconut oil

  • ½ tsp mustard seeds

  • ¼ tsp urad dal

  • ¼ tsp chana dal

  • 1 sprig curry leaves

  • 1 medium onion, finely chopped

  • 1 tbsp dry red chili flakes (adjust to taste)

Optional Finish

  • 2 tbsp grated coconut

🍽️ Instructions

  • Prepare the Cabbage – Steam chopped cabbage for 6–7 minutes until just tender. Toss with turmeric and salt; set aside.

  • Temper the Spices – Heat coconut oil in a wide pan. Add urad dal and chana dal; sauté until golden. Add mustard seeds and let them splutter.

  • Build the Base – Add curry leaves and chili flakes, followed by onions. Sauté until soft and translucent.

  • Combine & Finish – Add steamed cabbage and toss gently. Cook uncovered for 2–3 minutes. Finish with grated coconut if using.

*Note: I usually cook curries and vegetable dishes in a stainless steel kadai like this one. Triply steel takes a little practice,

but it gives excellent heat control and clean flavors.

🍷 Optional Serving Notes

Best served with rasam rice, sambar, or curd rice

Also works as a filling for wraps or grain bowls

💬 Soulful Note

In many South Indian kitchens, cabbage poriyal appears almost instinctively — especially in winter.

It’s a dish made between conversations, stirred quietly, and eaten with familiarity.

Comfort doesn’t always come dressed up.
