  • 3–4 cups idli dosa batter

  • Salt only if needed

For the Vegetable Topping

  • 1 small tomato, finely chopped

  • 1 tbsp grated carrot (optional)

  • 1 tbsp coriander leaves, chopped

  • A pinch of cumin (optional)

  • Oil or ghee

  • Prepare the Topping – Mix onions, tomatoes, chilies, coriander, and optional carrot.

  • Heat the Tawa – Keep heat medium so uthappam cooks evenly.

  • Pour Batter Thick – Add a ladle of batter and spread gently into a thick pancake.

  • Add Toppings – Sprinkle vegetable mixture evenly over the surface.

  • Drizzle Oil/Ghee – Around the edges and on top.

  • Cook Covered – Allow the underside to turn golden while the top cooks in steam.

  • Flip (Optional) – Flip for 30 seconds if you prefer fully cooked toppings.

  • Serve Hot – Best with coconut chutney, tomato chutney, and sambar.
