1 medium onion, finely minced
2 sprigs curry leaves
1 teaspoon ginger garlic paste

½ teaspoon turmeric
1 teaspoon red chili powder

12 oz shelled edamame (frozen)
2 bell peppers (green or multi-colored), cubed
(or any vegetables of your choice)

14 oz full-fat coconut milk
1 teaspoon garam masala
Salt to taste

Heat coconut oil in a saucepan over medium heat.
Add mustard seeds — once they begin to sputter, add minced onions and curry leaves.
Sauté until the onions turn translucent (about 2–3 minutes).
Add ginger garlic paste and sauté for another minute until fragrant.
Stir in turmeric and red chili powder, allowing the spices to bloom.
Add edamame and bell peppers, mixing well to coat with the spices.
Pour in ½ cup water, cover, and cook for about 5 minutes until vegetables are tender and edamame retains a gentle bite.
Add coconut milk, garam masala, and salt. Stir gently.
Warm through on low heat — do not bring to a boil.
Turn off heat and garnish with fresh cilantro.
Serve warm.
