๐ฟ A Quick Bharta for Fresh Brinjal Days
Sometimes a recipe begins simply because something at the market
looks too good to leave behind.
Fresh brinjals came home with me, and instead of making one of my familiar dishes,
I wanted to try something new.
This quick bhartaโroasted with tomatoes and garlic, then folded into a ghee-spiced yogurt baseโ
came together in barely twenty minutes.
The yogurt gives the bharta a gentle tang, kasuri methi brings its unmistakable fragrance,
and roasting the brinjal, tomatoes and garlic together gives the finished dish
far more depth than its short cooking time suggests.
Warm rotis or phulkas beside it, and dinner is done.

For the Roasted Brinjal Mixture
5 small to medium brinjals / eggplants
2 tomatoes
5โ6 garlic cloves, peeled
A little oil, optional, for roasting
For the Bharta
2โ3 tablespoons ghee
1 teaspoon cumin seeds (jeera)
3 tablespoons kasuri methi, lightly crushed between your palms
โ teaspoon hing (asafoetida)
1 large onion, thinly sliced
ยผ teaspoon turmeric powder
1โ2 teaspoons red chili powder, to taste
1 teaspoon coriander powder
ยฝ cup plain yogurt, whisked until smooth
Salt, to taste
ยพ teaspoon garam masala
Step 1 โ Roast the vegetables โ Place the brinjals, tomatoes and garlic cloves in an appe/paniyaram pan. Roast with or without a little oil, turning them frequently so they soften and develop roasted spots evenly on all sides.
Step 2 - Mash the roasted mixture โ Once everything is tender, allow it to cool just enough to handle. Mash the roasted brinjals, tomatoes and garlic together. Set aside.
Step 3 - Build the aromatic base โ Warm the ghee in a pan over medium heat. Add cumin seeds, kasuri methi and hing. Sautรฉ briefly until fragrant.
Step 4 - Caramelize the onion โ Add the thinly sliced onion and sautรฉ until soft and golden.
Step 5 - Bloom the spices โ Add turmeric, red chili powder and coriander powder. Stir well and cook briefly until the spices coat the onions and lose their raw aroma.
Step 6 - Add the yogurt โ Lower the heat. Add the whisked yogurt gradually, stirring continuously so it blends smoothly with the onion-spice mixture. Cook until the yogurt thickens and begins to leave the sides of the pan.
Step 7 - Bring the bharta together โ Add the mashed roasted brinjal, tomato and garlic mixture. Season with salt and mix thoroughly.
Step 8 - Finish with garam masala โ Stir in the garam masala and cook for another 5 minutes, allowing the roasted vegetables, yogurt and spices to settle into one another.
Step 9 - Serve warm โ Remove from the heat and serve with hot rotis, phulkas, parathas or bajra roti.

Serve warm with freshly made rotis or phulkas, sliced onion and perhaps
a simple cucumber salad on the side.
For a more rustic meal, pair it with bajra roti and a little plain yogurt.

Sometimes the freshest thing you brought home from the market needs only a hot pan,
a few familiar spices and enough curiosity to cook it differently.

Keep the heat low when adding the yogurt and whisk it well beforehand.
This helps it incorporate smoothly rather than splitting.
The brinjals should become very soft during roastingโthat collapsing
tenderness is exactly what gives bharta its lovely texture.
And don't rush the onion. That little bit of golden sweetness balances
the yogurt's tang beautifully.
Use fresh, tender brinjals. Since this is such a simple preparation,
their flavor really comes through.
Turn while roasting. Rotating the brinjals, tomatoes and garlic in the appe pan
helps them cook evenly and develop deeper roasted flavor.
Adjust the chili to your table. Start with 1 teaspoon for moderate heat and increase
toward 2 teaspoons if you like it spicier.
Use full-fat plain yogurt if possible. It generally gives the smoothest, richest result.
Crush the kasuri methi between your palms before adding it to release its aroma.
For a looser bharta, add a spoonful of warm water near the end; for a thicker one,
cook uncovered for another minute or two.
Can I roast the brinjal directly over a flame instead?
Absolutely. Direct-flame roasting will give the bharta an even smokier flavor.
Roast until completely tender, cool, peel away the charred skin and mash.
Can I use oil instead of ghee?
Yes. A neutral oil will work, although ghee contributes a lovely richness
to this particular version.
Why add yogurt before the brinjal?
Cooking the yogurt with the onion and spices creates a tangy, creamy masala base
before the roasted vegetables are folded in.
Can I make this ahead?
Yes. Refrigerate once cooled and gently reheat over low heat. Add a splash of water
if it has thickened considerably.

Roti and phulka are perfect. Paratha or bajra roti would also be wonderful.
