  • 12 cups okra (bhindi), chopped

  • Salt to taste

🥣 Finish

  • 2–3 tbsp yogurt (well whisked)


🍽️ Instructions

  • Heat oil in a pan. Add mustard seeds and let them splutter.

  • Add onions, curry leaves, and garlic.
    Sauté until soft and lightly golden.

  • Add turmeric, red chili powder, and sambar powder.
    Stir gently — let the spices bloom in the oil.

  • Add chopped okra. Mix well to coat with spices.

  • Cook uncovered on medium heat, stirring occasionally,
    until okra softens and loses its stickiness.

  • Add salt and continue cooking until slightly crisp and well coated.

  • Lower heat. Add whisked yogurt and mix gently.
    Cook for 1–2 minutes (do NOT overcook after adding yogurt).

  • Turn off heat. Let it rest for a minute before serving.
