And then comes the transformation—a ball of dough rolled beneath a pin,
a stuffed bread pressed gently beneath the palms,
a flatbread puffing over heat.
Across India, breads take countless forms.
Some are made every day almost without thought.
Others are stuffed, layered, or saved for occasions
when there is a little more time to linger in the kitchen.
This collection gathers together rotis, chapatis, parathas, stuffed flatbreads,

Some need little more than pickle, yogurt, or a spoonful of ghee beside them..
