Main Ingredients:
3 cups spinach, blanched
3 tbsp plain yogurt
1½ cups cooked chickpeas (or canned, rinsed)
Salt, to taste
For the masala:
1 tbsp oil
1 tsp cumin seeds
4–5 garlic cloves, crushed
1 green chili, finely chopped
1 medium onion, finely chopped
¼ tsp turmeric powder
½ tsp red chili powder
½ tsp garam masala
1 tsp crushed kasuri methi
For Garnish:
Fresh cilantro, chopped
Blend the Greens – Blanch spinach in boiling water, cool completely, then blend with yogurt into a smooth paste.
Build the Base – Heat oil in a pan. Add cumin seeds and let them splutter. Add crushed garlic, green chili, and onions. Sauté until onions turn soft and lightly golden.
Spice It Up – Add turmeric, red chili powder, garam masala, and crushed kasuri methi. Stir briefly until fragrant.
Add Spinach Base – Pour in the blended spinach–yogurt mixture. Bring to a gentle boil.
Add Chickpeas – Add chickpeas and salt. Cover and simmer for 7–10 minutes, allowing flavors to meld.
Finish – Garnish with fresh cilantro and remove from heat.
Serve with rotis, naan, or steamed rice
