Main Ingredients:
1 packet spinach (fresh, loosely packed)
1 cup chickpeas (cooked or canned, drained)
For Masala Base:
1 medium onion, finely chopped
2–3 garlic cloves, minced
1 tsp cumin seeds
½ tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala
3 tbsp Kasuri Methi(crushed)/Dry Fenugreek leaves
Salt to taste
1–2 tbsp oil
For Blending:
1/2 cup yogurt (optional)
Blanched Spinach
For Garnish
Fresh coriander leaves, chopped
Prep the Greens – Lightly steam or sauté spinach until wilted/blanched. Cool slightly.
Blend Base – Blend spinach with yogurt (if using) into a smooth puree.
Build the Tempering – Heat oil in a pan. Add cumin seeds and let them splutter.
Sauté Aromatics – Add chopped onions and cook until soft and lightly golden. Add garlic and sauté until fragrant.
Bloom the Spices – Add turmeric, chili powder, coriander powder, crushed Kasuri Methi and cumin powder. Mix and cook briefly until aromatic.
Add Spinach Puree – Pour in the spinach mixture and simmer gently.
Add Chickpeas – Stir in chickpeas and mix well.
Simmer to Finish – Add water if needed and let it cook for 8–10 minutes until flavors come together.
Final Touch – Add garam masala and garnish with fresh coriander.
