become part of the same deep, generous gravy.

Across Indian kitchens, there is no single way to make a meat curry.

Some are fiery and deeply spiced.

Some are softened with coconut.

Others carry the tang of tomatoes or tamarind, the warmth of pepper,

or the richness that comes simply from giving a pot enough time.

This collection gathers the chicken and meat dishes that have found a place at my table—

Some come from the kitchens that shaped me.
