For the Chicken
8β10 chicken drumsticks (skin-on or skinless)
For the Marinade
1Β½ tbsp red chili powder
1 tbsp black pepper powder
1 tsp cumin powder
Β½ tsp turmeric powder
1 tsp garam masala
1 tbsp ginger-garlic paste
1 tsp soy sauce (optional)
1 tbsp lime juice
Salt, to taste
Make the Marinade
Mix chili powder, black pepper, cumin, turmeric, garam masala, ginger-garlic paste, soy sauce, lime juice, and salt into a thick paste.
Coat the Chicken
Rub marinade evenly over drumsticks.
Place in a ziplock bag and refrigerate at least 4 hours (overnight = best).
Preheat Oven
Heat to 350Β°F (175Β°C).
Line a baking tray with foil and brush lightly with oil.
Bake β First Side
Arrange drumsticks spaced apart.
Bake 10β15 minutes.
Flip & Finish
Turn drumsticks, baste with leftover marinade, and bake another 10β12 minutes until golden and fully cooked through.
Serve
Wrap bone ends in foil for presentation.
Serve hot with lemon wedges.
