Main Ingredient
3 medium potatoes, peeled and cubed

For the Masala Base
2 tbsp oil
ยฝ tsp mustard seeds
ยฝ tsp cumin seeds
1 small onion, finely chopped
ยฝ tsp turmeric powder
ยฝ tsp coriander powder
Salt to taste
For Garnish
Fresh cilantro, chopped
Lemon wedge (optional)
Prepare the Potatoes โ Peel, cube, and rinse the potatoes. Keep them submerged in water to prevent browning.
Temper the Spices โ Heat oil in a pan over medium heat. Add mustard seeds; let them pop. Add cumin seeds and let them sizzle gently.
Soften the Onion โ Add chopped onion and sautรฉ until soft and translucent, not browned.
Bloom the Spices โ Add turmeric, coriander powder, and salt. Stir gently for 30 seconds to release aroma.
Cook the Potatoes โ Add drained potatoes and toss well to coat with spices. Sprinkle a few tablespoons of water, cover, and cook on low for 12โ15 minutes, stirring once or twice.
Finish & Rest โ Once potatoes are tender, turn off heat. Garnish with cilantro and a squeeze of lemon if using.
*Note: I usually cook curries and vegetable dishes in a stainless steel kadai like this one. Triply steel takes a little practice,
but it gives excellent heat control and clean flavors.
Serve with rotis, parathas, or plain rice
Lovely alongside dal or yogurt
Can be wrapped into a simple sabzi roll
This is the poriyal/sabzi that quietly teaches confidence. No heavy masala, no tricks โ just patience and attention.
Many Indian home cooks learn more from this dish than from elaborate curries.
Tip: Spice upgrade: Add green chili slit lengthwise for gentle heat.
Too dry? Add a splash of water and cover again for 2 minutes.
Want crisp edges? Uncover for the last 3 minutes and let potatoes lightly brown.
