Β½ cup plain yogurt
1 cup brown sugar
3 tbsp flaxseed powder (soaked in 3 tbsp warm water)
1 tsp vanilla extract
2 tsp baking powder
Β½ tsp salt
1Β½ cups all-purpose flour
Β½ cup canola oil (or any neutral oil)
Prep- Preheat oven to 350Β°F (175Β°C). Grease and line an 8-inch round baking pan with parchment paper.
Apple Layer- Pour caramel sauce into the base of the pan. Sprinkle cinnamon evenly, then spread diced apples over it.
Cake Batter- In a mixing bowl, whisk yogurt, brown sugar, flaxseed paste, and vanilla. Add baking powder and salt, then fold in flour. Finally whisk in oil until smooth and lump-free.
Bake- Pour batter over the apple-caramel layer. Bake 50β55 minutes, or until a toothpick inserted in the center comes out clean.
Cool & Flip- Let the cake rest 10 minutes. Place a plate over the pan and invert gently.
Finish- Brush extra warm caramel over the top. Serve warm with ice cream, whipped cream, or a drizzle of cold milk.
