yet always missed when absent.
Freshly grated carrots are cooked gently with mustard seeds, curry leaves, and coconut,
allowing their natural sweetness to stay intact.

📝 Ingredients

Main Ingredient

  • 2 cups fresh grated carrot

For Tempering

  • 1 tbsp oil

  • ½ tsp mustard seeds

  • 1 tsp urad dal

  • 1–2 dried red chilies

  • Few curry leaves

For Finishing

  • 3 tbsp freshly grated coconut

  • Salt to taste


🍽️ Instructions

  • Temper the Oil – Heat oil in a pan. Add mustard seeds; let them splutter. Add urad dal, dried chilies, and curry leaves.

  • Cook the Carrots – Add grated carrots and salt. Sauté gently for 5–6 minutes until just tender.

  • Finish with Coconut – Add grated coconut, mix well, cook for 1 minute, and switch off heat.

    *Note: I usually cook curries and vegetable dishes in a stainless steel kadai like this one. Triply steel takes a little practice,

    but it gives excellent heat control and clean flavors.
