For Tempering
1 tbsp oil
Β½ tsp mustard seeds
1 tsp urad dal
1β2 dried red chilies
Few curry leaves
For Finishing
3 tbsp freshly grated coconut
Salt to taste
Temper the Oil β Heat oil in a pan. Add mustard seeds; let them splutter. Add urad dal, dried chilies, and curry leaves.
Cook the Carrots β Add grated carrots and salt. SautΓ© gently for 5β6 minutes until just tender.
Finish with Coconut β Add grated coconut, mix well, cook for 1 minute, and switch off heat.
Serve with steamed rice, rasam, sambar, or as a side for curd rice.
