For the rice:
2 cups basmati rice, cooked and cooled
3Β½ cups water (for cooking rice)
Vegetables:
2 cups bell peppers (mixed colors), chopped

For the Masala Base
1 tbsp coconut oil
1 tsp cumin seeds (jeera)
A few curry leaves
1 large onion, finely sliced
4β5 green chilies, slit lengthwise
1 tbsp ginger-garlic paste
Spices & Seasoning
Β½ tsp turmeric powder
1Β½ tsp red chili powder (adjust to taste)
2 tsp garam masala
Salt to taste
For freshness
3β4 tbsp cilantro (coriander leaves), finely chopped
2 tbsp mint leaves, finely chopped
